Honey, Ginger and Coconut Popsicles (DF, GF, VEG.)

Not only are these popsicles are delicious treat on a hot summers day – research has shown that these ingredients are full of vitamins, minerals, fiber and electrolytes, prevents illness, keeps you hydrated and in good shape.

Ingredients

  • 3 cans of coconut milk
  • 1 cup of Honey Australia’s Ginger Honey

Method:

  1. In a saucepan stir in coconut milk and Ginger Honey. Bring to a boil over a medium high heat, stirring occasionally until the honey is dissolved.
  2. Reduce the heat to low and simmer for 10 minutes.
  3. Allow to cool to room temperature then divide the milk into popsicle moulds and insert paddle pop sticks and freeze until firm.
